Ozone (O₃) is recognized by the U.S. Food and Drug Administration as an antimicrobial agent for use in the treatment, storage, and processing of foods, including meat and poultry, in both gaseous and aqueous phases (21 CFR 173.368). Ozone is also listed by the USDA National Organic Program as an allowed substance in organic handling (7 CFR 205.605(b)(21)).
